It's full of spinach so we're not completely forgetting our greens, and gets it plant-based creaminess from vegan cream cheese and tofu -- adding an amazing boost of protein to this party pleaser!

I made this twice this holiday season because the first one disappeared so quickly! Vegan Spinach Dip in Sourdough Bowl is a popular version of a classic, with good looks and easy portability. Highly versatile, too! You can serve it cold, in a dish to really simplify it. Or, serve cold in a bread bowl. Or, hot in a dish...or obviously hot in a bread bowl (my favorite). And, the dip is easily prepped up to 2 days ahead of time, refrigerated, and brought out to fill a bowl when ready to serve.

I love Vegan Spinach Dip in Sourdough Bowl for appetizer parties (is there any other type?) because it provides such a beautiful visual centerpiece. Arrange cut up veggie sticks and a variety of crackers around it for several dipping options. Trust me, the bread pieces will disappear fast and you'll want additional dippers! Thinking ahead, I'll probably make this again for the Big Game Day!

The ingredients of this Vegan Spinach Dip are fairly simple and easy to make. First, sauté some leek greens in garlic-infused olive oil to bring out a roasted rich aromatic flavor from the leeks. Leek greens are low-FODMAP, greatly reducing the fructans from standard spinach dips which include an entire onion. The creaminess is a combination of vegan cream cheese (I use Kite Hill brand, as it's made from almonds and clean ingredients), and extra firm silken tofu. The softer the tofu, the higher in FODMAPs it is. To really be extra-low-FODMAP, I'd use regular firm tofu instead of silken, but I want the texture to really be smooth. Two tablespoons of silken tofu is low-FODMAP, but then goes up from there. One serving of this Vegan Spinach Dip contains a low-FODMAP portion of silken tofu. But, it also packs a whopping 6 grams of protein and 4 grams of fiber! Who'd expect that from an indulgent appetizer?
