Vegan Lazy Lasagna

Vegan Lazy Lasagna packs all the flavors and textures of a layered lasagna casserole into a stovetop pasta recipe! What makes it "lazy?" No casserole dish, no layering, no baking needed, and all can be made in about 45 minutes! Absolutely delicious, Vegan Lazy Lasagna has creamy ricotta mixed into curly gluten-free pasta, a meaty tomato basil sauce folded into it all and then topped with more meat sauce for serving along with touches of vegan parmesan. Perfect for a weeknight date night!

Off-the-shelf ingredients make this easy, low-hassle and quick. I used Kite Hill Vegan Ricotta and Beyond ground 'beef'. Neither have added garlic or onion, plus Kite Hill uses almonds as the main ingredient in their dairy-free products, which is great for a low-FODMAP vegan diet. Gluten-free pasta further pushes this dish toward low-FODMAP.
First make a simple meat sauce by browning the vegan 'ground beef', then adding in the tomatoes and spices. Boil pasta as usual, then stir in the ricotta and parmesan to "melt" into the pasta. Stir in half the meat sauce and combine. To serve, scoop into pasta bowls, then top with remaining meat sauce. Yum!

Vegan Lazy Lasagna is a very rich dish, full of protein, quite filling, extremely satisfying and absolutely date-worthy. Great for a stay-at-home Valentine's Day dinner! Pair with a simple green salad and a nice Pinot Noir. Maybe I should have called it 'heaven in a bowl'.

In just 45 minutes, stovetop to table this Vegan Lazy Lasagna. It makes a generous 6 servings, which for me is actually more like 8. Leftovers keep and reheat well in the microwave. Just store the topping meat sauce and cheesy pasta separate in the refrigerator until serving time. It tastes just like night one!
