Vegan Lasagna, Classic Style is just that: A classic Italian casserole with a red tomato 'meat' sauce, layered noodles, and cheeses. This version is also gluten-free, onion and garlic-free, making it a fantastic low-FODMAP indulgence for those with a sensitive tummy or food intolerances, while not harming animals for the result. No one will miss the animal ingredients or gluten in this comforting meal!

My partner is not vegan, so he's the perfect test-pilot for my veganized recipes. He's also not gluten-intollerant, although he does have a dairy sensitivity, so this was a good test for his tummy, along with mine! My personal favorite lasagna is one that I make with thin layers of vegetables and no pasta whatsoever, but I wanted to try to replicate something he would have ordered at an Italian restaurant to see how close we could come using all low-FODMAP and cruelty-free ingredients. Let me tell you, this Vegan Lasagna, Classic Style passed with FLYING COLORS! Not only did he (and I) swoon over the flavor, texture, and overall taste combinations, but he reported his tummy feeling just fine afterward.

A couple of decades ago, this wouldn't have been so easy to make. But, thanks to recent developments in the food industry, impressive meat and cheese replacements are available. These aren't always considered "healthy", however when compared side by side to their animal counterparts, they are still a healthier alternative, with a similar amount of protein content, and healthier fat sources. I don't advocate eating these products weekly, but for special occasions or when you're entertaining omnivores, these are fantastic options to stay cruelty-free, and deliver a more environmentally friendly dinner table. It makes a great conversation starter, too with omnivores, proving first-hand that they can go animal-free without missing a thing.

FODMAPs:  Depending on the vegan 'meat' chosen, there may be small amounts of FODMAPs. Check for wheat, onion, and garlic and know how sensitive your body is. I use Beyond meats, and there is a tiny amount of garlic added, but when dispersed into the dish with no other garlic or onion added, I'm able to tolerate it. Canned tomato products are another place producers sneak in garlic and onions. Tomatoes themselves can be high in fructose, but should be tolerable in amounts in this dish. I love using part of a fennel bulb for flavor and texture similar to an onion, but much lower in FODMAPs. Find noodles that work for you. I love Jovial brand brown rice pasta. Soft vegan cheese is often made from cashews, which we should avoid. Kite Hill makes the best vegan ricotta and uses almonds as the base.

This Vegan Lasagna, Classic Style is everything you want it to be. Layers of soft delicate noodles smothered in ooey gooey melty cheese and tomato sauce with meaty savory bites, that touch of fennel common in sausage, and the coveted crispy crunchy edge pieces that everyone fights over.
