A MUST-HAVE at any chilly season appetizer buffet! Hot artichoke dip is a favorite of everyone and is the BEST way to get that veggie platter to disappear! Offer up this delicious hot, melty, cheesy sensation and watch the guests just stand around the dish while grazing. This is my version of Vegan Hot Artichoke Dip. Classic, veganized and dressed up a bit.
This Vegan Hot Artichoke Dip is full of artichokes, plus! Artichokes are the main ingredient, but I like adding in red and green touches to bring a Christmassy, colorful touch just perfect for serving on any holiday appetizer table, or to bring to a pot-luck. There is a touch of spinach in this dip and some finely diced red bell peppers, both adding some health benefits to this overly creamy dip.
I would not call this a "Spinach Artichoke Dip" because the spinach is really just there as a green touch. Some people also add red onion, but since that is a high-FODMAP food, I avoid onion and it’s not missed at all! I love how beautiful sliced almonds and chopped chives decorate the surface of this dip, plus the almonds toast while baking and add a nice crunchy element to the dip. Not just for the holidays, these add-ons make this the BEST Hot Artichoke Dip ever, and no one will know it’s dairy-free!
You can also prep this in advance, laid out and decorated in the baking dish, cover with foil and refrigerate 1-2 days ahead of time. Bake just before serving. It’s a great take and bake appetizer to take to a host’s party. Just check to be sure you’ll be able to use their oven when you arrive.
Artichokes themselves are high-FODMAP, so in theory, why not add garlic and onion, too? Because FODMAPs are a cumulative irritant and the more you eat, the worse you feel. I love artichokes, so I bear them from time to time, and by reducing or eliminating remaining FODMAPs in the recipe, small servings of the dish become tolerable for my body. Maybe this dairy-free, garlic and onion-free recipe will be tolerable for you, too! Know your body, watch your reactions.
