Sweet corn is the star of this vegan chowder, which by itself can be high FODMAP, but here I've surrounded it with easy-on-the-gut vegetables to create a chowder where you can have your lunch or dinner and enjoy your corn!
I've used frozen corn here for a year-round recipe, but if it's late summer, grab a few extra cobs at your Farmer's Market and use fresh cooked corn instead for an extra treat.
Sweet corn is generally not a low-FODMAP food. It contains high levels of sorbitol. If you are not sensitive to this, you can increase the amount of corn to 5 cups total corn for the recipe. A half corn on the cob is considered low-FODMAP, which is about 1/2 - 2/3 cup. One, one-cup serving of finished chowder contains 1/2 cup of sweet corn. Any more and we’re pushing over the limit. So, enjoy this chowder in moderation with a nice big side salad!
