Who doesn't love loaded tots? As a vegan, or someone who doesn't tolerate dairy, you usually need to pass up this treat, or make them yourself. Most vegan cheese sauce recipes contain cashews. If you also have IBS like me, this recipe is for you! And, if you have a stomach of steel, this recipe is also for you! I'm obsessed with how great this turns out and will keep using it on as many things as I can think up. I have two versions: Vegan Cheese Sauce used here, which is smooth, mild and creamy and Vegan Beer Cheese Dip for a bit more spice and flavor. Either is great for nachos, pretzel bites, and would be fantastic with pita crisps or gluten-free crackers, drizzled over vegetables, or as a mac-and-cheese sauce. Take your pick and bring this to your next pot-luck party and no one will even suspect this is a 'healthy' cheese dip.
Toppings are variable and optional. The tots are fantastic, as is, with just the cheesy sauce. Or, experiment with whatever you can find in your fridge. I like to keep it simple and use only a few traditional nacho garnishes like avocado, black olives, pickled Jalapeños, fresh tomatoes, and chives. You can also add shredded lettuce, sliced green onion, salsa, a plant-based protein like ground Beyond beef, pinto beans, pumpkin seeds. What do you put on your loaded tots? Leave a comment.
