These Toasted Sunflower Chocolate Energy Bites are so delicious, you'll think you're eating a cookie instead of a healthy energy bite! The roasted nutty flavor of toasted sunflower seeds and coconut marries with rich cacao and a touch of malty tasting maca powder for energy and mood boosting support. Great chewy snack to take with you hiking or when you'll be out all day and need a reliable energy snack. Made in 30 minutes or less, these are a great money-saver compared to packaged bars, not to mention you control the quality of ingredients. Keep in the fridge and access anytime!

Sunflower seeds are particularly high in Vitamin E and Selenium. These function as antioxidants helping to combat free radicals, known to contribute to several chronic diseases. Sunflower seeds may help lower cholesterol, blood pressure, and blood sugar. They also contain protein, magnesium, and several plant compounds.

Maca root is native to Peru and has been used medicinally for thousands of years. Traditionally, it has been used to treat respiratory conditions and rheumatic disease. It is also known for its potential to increase libido, assist sexual dysfunction, boost fertility, and relieve symptoms of menopause. It is used to improve mood and increase energy. There are other possible health benefits, but all benefits have limited studies and results. The BEST part about Maca, IMO, is its malty, butterscotchy flavor. Yummy added to chocolate smoothies, fantastic in these Toasted Sunflower Chocolate Energy Bites, too! Omit maca if pregnant or nursing, as more studies are needed.


The sunflower seeds and coconut are the main sources of "energy" in these bites. I added a touch of Pure Hemp Protein for additional boost, though not much. You can add more, though you'll probably need to add more honey (or maple syrup), too and I didn't want these bites to be high in sugars.

FODMAPs: Sunflower seeds are low-FODMAP to 2 teaspoons. It's unclear if they are high in FODMAPs beyond this amount. The amount of sunflower seeds in one Bite is closer to 4 teaspoons. Additionally, coconut is higher in FODMAPs in large amounts. The amount here is in the low-FODMAP category. I use raw honey in this recipe for allergy benefits, and honey is high-FODMAP, though it remains a low quantity in one Bite. You can substitute maple syrup to reduce FODMAP risk and make them vegan.
