Raspberry Lemon Loaf, Gluten-Free and Dairy-Free

Raspberry and lemon, a perfect bright flavor combination for Spring, Summer, or anytime! The bright pink raspberries make this a great idea for Valentine's Day. Raspberry Lemon Loaf, Gluten-Free and Dairy-Free is very easy and the ingredients come together in about 20 minutes. Yes, the baking and cooling take time, but very little attention. Get it in the oven, multi-task any other thing you want to do while waiting for the timer. The smell it creates will have everyone in the house taking deep, relaxing heavenly breaths of anticipation.

I started with a recipe by one of my favorite bloggers of baked goods, The Loopy Whisk. Her cake is gluten-free, but includes dairy and eggs. For my version, I kept the eggs so the bread would have wonderful loft and texture. But, I switched out the dairy ingredients for non-dairy versions. The natural live probiotics of vegan yogurt are often used in vegan baked goods to help recreate the work of eggs in making a cake rise, similar to buttermilk in some old-fashioned recipes. I used Kite Hill Greek Yogurt, which is lower in fat and higher in protein and resulted in a successful cake texture. Use either plain or vanilla flavor yogurt. The result is a fabulous gluten-free, dairy-free cake without the worry of a dense gummy center. It is flexitarian, but not vegan due to the use of eggs. You can try substituting flax eggs to make it fully vegan, however, large format baked goods that are both vegan and gluten-free are tricky and I have not tried it to verify if it works.

You can use either fresh or frozen raspberries for this loaf. Just adjust baking times as per recipe, below. For the bright topping, use crushed freeze-drieds raspberries. These add more beauty than flavor, so they are optional.

All ingredients in this Raspberry Lemon Loaf are low-FODMAP, or in low-FODMAP quantities, so one slice of this cake is in theory, low-FODMAP. By eliminating dairy and using almond-based plant milk and yogurt, this should be safe to enjoy on a low-FODMAP diet.
