Why does everyone get pumpkin crazed in the Fall? Because it's fabulous and can be used so many ways! Our brains tend to think "sweet" with the idea of pumpkin because of, duh, pumpkin pie, but also all of the pumpkin spice treats that seem to multiply on shelves every Fall. But, this squash can be used for many savory dishes, too.


This Pumpkin Chipotle Pasta, Vegan is not mac 'n cheese, though might resemble that in color and texture. This creamy pasta sauce is sophisticated, rich and creamy due to the use of canned pumpkin puree and silky smooth coconut milk. Chipotle peppers add a slight kick to offset the earthy sweet squash taste, and can be increased if you really love spice. I've kept the kick minimal, more of an afterthought.

There's one ingredient you should definitely not skip: ground sage. Trust me on this, sage and pumpkin are a match made for each other in the savory world. Thyme is also a contributor here and if you really want to lean into the savory flavors, you can add in some rosemary, too for a more herbal note. Delightfully vegan and gluten-free!


This pasta is absolutely delicious on its own, as pasta + sauce. It would be great paired with a fresh green salad, or a nice side dish for something hearty like a vegan 'meat'loaf. To bump it up as a more filling meal, I added baby spinach and browned plant-based chick'n, both of which are optional. Feel free to add your own green or protein and experiment.

Pumpkin itself is full of great nutrition. Native to North America, Its orange color signifies it has beta carotene in it, vitamin A, which contributes to eye and skin health. It is antioxidant-rich, which helps prevent many diseases. High in potassium and vitamin C, it may boost immunity. It's low in fat, and high in fiber, which helps out with cholesterol and heart health.


Pumpkin is low-FODMAP up to 1/3 cup. This recipe has low-FODMAP servings of pumpkin in it, however it calls for light coconut milk, which may be high in FODMAPs at one pasta serving size.
