When pineapple is in season, I love to find all kinds of uses for it! Fresh sun-ripened pineapple is one of the most enjoyable flavors, with its texture and juice that pops in your mouth. Pineapple also contains the enzyme bromelain, which helps the body fight pain and inflammation.
Beyond having fresh cut pineapple on its own with breakfast or dessert, I'm using it in savory main dishes this week. Pineapple is included in my Al Pastor Sauce, to help offset the chilies, and it is also included in the Pulled Jackfruit Tacos Al Pastor, mixed in with the jackfruit, and finally mixed with lime juice, jalapeño and cilantro for this Pineapple Salsa. Pineapple is a low-FODMAP fruit, so by omitting the red onion in the salsa, we can enjoy full servings of this salsa on its own with chips, on top of tacos, or it would dress a white fish or tofu steak beautifully.
It is a FANTASTIC accessory to Pulled Jackfruit Tacos, Al Pastor. Don't skip it, and you won't regret it!
