Pancake cravings! I usually make a standard gluten-free pancake with blueberries added, but I was craving the carbs with some extra fiber, so tried my basic recipe with oats. Success! Make sure you pulse to chop the oats first or you will end up with oats that don’t cook fully and present a fairly chewy and stale texture. The chopped oats are small enough to cook through, while still giving the pancakes that something 'extra.'
I know the idea of making pancakes from scratch (instead of a mix) sounds time-consuming, but I promise, as long as you have the items in your pantry, this takes no time to pull this together. And, if you’re really strained for time, pre-mix the dried goods a few days beforehand and keep in a tightly sealed container until ready to cook and flip!
Serve with fresh fruit, maple syrup, or chia jam and a drizzle of thinned nut butter, maybe a sprinkle of chopped nuts, or chocolate chips. Lots of options!
