New cookie recipe alert! New Mexican Snickerdoodle Cookies are a mash-up of a classic snickerdoodle, done vegan and gluten-free (of course), plus Bizcochito's, the state cookie of New Mexico. The result is a soft and chewy vanilla cinnamon scented cookie with a hint of butterscotch and a dance with anise. Perfect for cookie exchanges, bringing to a Potluck, or gifting to friends and neighbors.  People will awe and ask about the twist in these not-so-typical Snickerdoodles.

One of the best parts of travel for me is learning about regional food traditions and trends and getting to taste them!  In New Mexico, they have an official state cookie called a Bizcochito, which is a bit like a sugar cookie, but typically made with lard (which I’ll skip for obvious reasons), and anise, a flavor I’ve been dying to use this holiday season!  I didn’t want to make roll and cut cookies, so I incorporated this flavor into a snickerdoodle, which seemed like it would work out perfectly.  I was right!  I also incorporated a touch of Brandy, which I noticed some of the traditional Bizcochito’s include.  I’m telling you, you haven’t had a snickerdoodle like this and you’ll never want the “old style” after trying this.

Anise is a aromatic spice that tastes similar to licorice and can be off-putting to some people.  But its sweet nature is enhanced in sweet environments.  It’s often used in classic biscotti.  The anise in these New Mexican Snickerdoodle Cookies is proudly noticeable, yet doesn't overwhelm the other flavors of this cookie.  The brandy-infused vanilla cookie crumb and touch of cinnamon warm the anise for a delicious cookie.  Delightful, crisp cookies with soft and chewy centers, this is making the top of my list for holiday cookies from now on! 





For a chewier texture, pull them out of the oven on the early side, when centers still appear underbaked.  Otherwise, these become crispy when cooled, which is also super appealing and more similar to the original Bizcochito.  Your choice.
