Lemon Poppyseed Loaf, Gluten-Free and Dairy-Free

Lemon Poppyseed is a classic combination and one of my favorite ways to celebrate the tart fruit that is in season Winter through early Spring. This Lemon Poppyseed Loaf Gluten-Free and Dairy-Free is a trial of mine that turned out so wonderful I had to share the recipe! I'd share the loaf, too, but I ate half of it before I could say "save some". Luckily, it's easy to make. The ingredients come together in just 20 minutes. Yes, it takes a while to bake, but think of all the other things you can do while this is in the oven for an hour.

Loaf cakes can be tricky when going gluten-free and vegan. This cake includes eggs, which help give it loft and keep the crumb moist with just enough air and density. It is completely gluten-free, dairy-free, and can be enjoyed on a low-FODMAP diet.


There's something about lemon balanced with the perfect amount of sweetness! This loaf is bursting with lemon, but is just sweet enough to induce mouth-watering, but avoid the pucker. And, you've got to love the tiny crunch of poppyseeds infused throughout the loaf. Slice a piece for breakfast or to go with a full brunch meal, or savor it for dessert.
