Nothing says Fall like the return of oats. Oatmeal for breakfast, savory oats, baked oats in all its variations and of course, Iced Oatmeal Cookies with added flavors from pumpkin spice season. There is no pumpkin in this cookie, just the warm spices including cinnamon, ginger, nutmeg and cloves along with cardamom. That in itself is enticing enough to stand on its own, but then add sweet vanilla cookie icing on top that crisps up when cool and a truly addictive cookie has been born! Drool-worthy Iced Oatmeal Cookies are family-friendly, great for entertaining, bringing to a picnic or a potluck.
Iced Oatmeal Cookies have a soft chewy center, with lightly crispy edges. Tastes just like your Grandma's oatmeal cookie with a burst of spices and deliberate omission of raisins (although you could add them if you're a fan). These have the additional benefit of being vegan and gluten-free, and even low-FODMAP at one cookie.
Food sensitivities: These cookies are not nut-free, they utilize almond butter and almond flour, both which help the cookies stay moist and chewy after cooling. Due to cumulative almonds plus oats (use rolled oats, not quick-cooking oats to keep FODMAPs low), these are low-FODMAP at one cookie serving, but start to become moderate in GOS and Fructans if you eat more than one at a time.
