Energy bites, aka protein bites, cookie dough bites, power balls, whatever term used, they tend to have these things in common: no cooking or baking involved; keep for a long time in the fridge; make perfect on-the-go and travel snacks to keep you going between meals. Fudgy Energy Bites make a great easy chocolatey summer health snack when you don't want to turn the oven on. And, since they taste like a fudgy bite of cookie dough, win-win! These Fudgy Energy Bites are just one version of this snack and they pack 7 grams of protein per ball, plus healthy fats, including Omega-3's from hemp and pumpkin seeds.
I wanted a nut-free, grain-free bite, so used Sun Butter as the base (sunflower seed butter). Many similar recipes rely on dates as the sticky binder and sweetener, but since I'm FODMAP-sensitive, I've developed this recipe to use maple syrup and still achieve a perfect balance of moistness in each bite. Being nut-free makes them school friendly, and being grain-free makes my paleo friends happy. Of course they are vegan, and gluten-free, too.
