Here's my go-to recipe for Tofu Scramble! I've been making variations of this for years and it never gets old. The tofu cooks up just like scrambled eggs (minus the cholesterol and saturated fat), and rich flavors of herbs, nutritional yeast, tamari, and an undertone of curry from the addition of inflammation-taming turmeric powder. Farmer's Tofu Scramble is a fantastic breakfast dish when you want a warm comforting plant-based start to your day, packed with vitamins and protein.

I call this Farmer's Tofu Scramble because you can literally add any vegetables from the farm, or garden, or your crisper...you get the picture. I'm using distinctly low-FODMAP veggies here, but feel free to use any veggies you have on hand. Just be sure if they are slow-cooking veggies such as potatoes or winter squash, you pre-bake or boil them. This is a perfect scramble for adding in leftover cooked veggies from the night before. Fresh herbs can also be added! Play with it!

Tofu, or bean curd is a great source of plant-based protein, made of soy beans and minimally processed. Soy happens to also be one of the most-often GMO foods in agriculture so please always buy organic tofu to ensure it is not GMO. Often controversial, there many health experts who will steer you clear of soy claiming it disrupts hormones, and there are many health experts who claim soy can actually solve and prevent many hormonally centered issues and advocate for eating soy daily. Pay attention to your own body and reactions. If ever something makes you feel like crap, don't eat it. For me, I feel that soy helps me with headaches, and since tofu is low-FODMAP, my tummy deals with it well. I include tofu a few times per week, but not daily. Everything in moderation.
