This continues to be my favorite Fall soup, and I always forget how easy it is to make! Creamy Sweet Potato Chipotle Soup is thick and creamy, has a slightly sweet base with a kick coming from smoky chipotles, and a couple other simple ingredients. I love the addition of avocado to the soup! It adds healthy fat and contributes to it's creamy bisque-like texture. I use a touch of honey, but you can use maple syrup for an authentically vegan dish.
The basis really is just sweet potato, avocado and chipotles, and the whole thing can be made in just one pot and does not need to cook all day to get the wonderful rich flavors. No veggie broth or stock needed and the result is still a wonderful creamy soup with plenty of depth. Incredibly comforting on a chilly Fall day!
Choose orange or red fleshed sweet potatoes for the beautiful orange color, otherwise if using white flesh, the result after blending might be more of a grayish-green color due to the avocado and chipotles and will taste fine, but will not look as appetizing. We taste with our eyes before our nose and mouth get to taste!
Creamy Sweet Potato Chipotle Soup is quite punchy from the spice of the chipotles, so if making for kiddos, maybe cut way back to 1 teaspoon of the just the adobo sauce instead of 2 full chilies. Otherwise, I love cutting the spice of the soup with cooling cucumbers from my Poblano Cucumber Avocado Salsa, or just pair with a super simple sliced cucumber sandwich on the side. A dollop of Vegan Sour Cream is another amazing idea to add a cooling contrast, as is cilantro to cool the palate. Yum!
FODMAPs: Chipotles in Adobo Sauce tend to be packed with onions and sometimes garlic, so they are inherently not low-FODMAP. You can substitute dried chipotle powder (1 teaspoon) for the chillies in adobo sauce. Check the label on your powder and make sure it includes only dried chipotle, and no dried garlic or onion are included. Additionally, use maple syrup instead of honey, and know your limit on avocado. I can tolerate 1/4 of an avocado just fine, but not everyone can. Sweet potatoes are low-FODMAP up to 1/3 cup, so the servings in this soup go slightly above that. This is one of the few vegetarian soup recipes that tastes wonderful using only water as a base instead of veggie broth. Since most veggie broths include onion in them, this is a wonderful find for FODMAP sensitive guts. Despite the lack of veggie broth, there are enough ingredients stacked here that we cannot call it a low-FODMAP recipe, although it may not trigger your symptoms. Try it during your re-acclimation phase.
