Chocolate Mint Old-Fashioned Donuts

Once in a while, the craving hits and it's DONUT time! Rather than get in the car and seek out a donut shop, try making your own! Such a fun project for a weekend and to involve kids with. They love helping cut the dough and glaze and eat! Donuts seem intimidating, but actually are about as easy as making cookies. This dough is simple and comes together in 10 minutes. Also simple, but requires a little more time comes the heating of the oil for the first time, frying, then glazing each donut, which I like to do individually by hand to make sure I've hit every last crevice for those sweet crunchy edges as you bite into the rich cake.

Chocolate Mint Old-Fashioned Donuts are 'old-fashioned,' meaning they have a crackly exterior texture with a dense moist cake texture inside. Old-fashioned donuts are usually made with sour cream, but to keep these dairy-free, I used vegan yogurt by Kite Hill. You absolutely must deep fry these to get the crackles and stay with that old-fashioned result. Chocolate plus mint is one of my all-time favorite combinations and these donuts are super chocolatey and both the donut and glaze are infused with peppermint to accent the chocolate. Green stripes are optional, but since it's St. Patrick's Day soon, I went for it! 🍀

How do you make Chocolate Mint Old-Fashioned Donuts? Start by making the dough, which is very simple, but does require you to find "Cake Flour." Cake Flour is not the same as All-Purpose or Bread flours. Cake Flour has a lower gluten content, helping make cakes lighter and fluffier in texture.
Once your dough is made (I swear it takes 10 minutes or less!) roll it out to a thick flat shape, then cut your circles. If you don't have a donut cutter, you can use a large piping tip to cut the center circles or "donut holes". Place them all on a lined baking sheet and freeze for 30 minutes. The cold temperature of the dough hitting the hot oil is what makes the crackly texture, which is the best!
Heat a neutral flavored oil to 350°F. Good neutral oils for frying include canola, or I like to use refined olive oil. If going with olive oil, be sure it is "refined", which removes flavor and makes it more tolerable to high heat. Don't use your extra-virgin olive oil. It's not right for this purpose and way too expensive, so save that for salad dressings.
To fry, gently drop a few donut pieces into the hot oil and set your timer for 2 minutes. Turn the donuts over, remove the donut holes, and set timer for another 2 minutes. Scoop them out with a spider or slotted spoon.
It takes only a few minutes for them to cool enough to glaze. I dip them in the glaze, then use my fingers to make sure all the edges and crevices have been coated. Let them dry on the rack and these babies will stay fresh for several days! Keep covered in a container at room temperature up to 4 days.

This recipe for Chocolate Mint Old-Fashioned Donuts contains eggs as well as wheat flour. Therefore, they are not vegan, and they are not low-FODMAP. I'll challenge myself to come up with a vegan recipe, and next, a gluten-free one as well, but for now, these are so damn good, I had to share! They ARE dairy-free, which I always adhere to.
