Chocolate Ganache Thumbprint Cookies are one of those recipes you pull up when you have a cookie craving you need to cure fast. Absolutlely delicious, easy recipe with only 6 ingredients, and grain-free. These little gems pack 4 grams of protein each by using almond flour for a soft and chewy, shortbread-like cookie, topped with a soft dark chocolate center. Sprinkle with optional sea salt for a magical flavor combination.
When the holidays come around, my kitchen becomes a full-time bakery (almost 😉). At a certain point, I do actually get tired of the sugary treats and this is a really nice, healthier version of the cookies that make most cookie exchanges. Using maple syrup to lightly sweeten these is a wonderful natural way to add vitamins and minerals with the sugars, while using almond flour is a great way to keep these Paleo and add protein and fiber.
Chocolate and sea salt is a magical combination. It may sound like an oxymoron to put sweet and salt together, but salt enhances all flavors, including sweet. If you haven't tried a salted chocolate, give it a shot and let your mouth dance with the flavors! (Of course, the salt is optional). I like to use good dark chocolate (70% dark) that I would eat on its own, but you can also use melted semi-sweet chocolate chips (make sure there is no milk in them).

Ingredients in these cookies are low-FODMAP in low amounts. The almond flour is low-FODMAP up to 2 cookies.
