Chocolate Chip Oatmeal Cookies

Here's a classic flavor combination, oats and chocolate, made bakery style in these Chocolate Chip Oatmeal Cookies. These cookies are vegan, gluten-free and will remind you of any bakery cookie due to their big and thick, heavy texture with crisp edges and chewy centers. Absolutely delicious! Perfect to bring to a picnic or to an afternoon work meeting.

Flaky sea salt top these cookies for that extra professional bakery touch, but you can skip that if you're not into pure magic. You'll also notice a full tablespoon of cinnamon in this recipe. That's not a mistake! I actually wonder if I should have used more, as it's just lightly noticeable in the final cookies. But, seeing as these are loaded with chocolate chunks, I didn't want to overpower either flavor. I think the result is just right, so don't decrease the cinnamon!

I think chocolate and oats are a fabulous combination, but some people are real fans of oatmeal-raisin. I don't particularly love raisins, plus they are high-FODMAP, so in my opinion, this recipe for Chocolate Chip Oatmeal Cookies is a double win! If you're more of a traditionalist, you could easily replace the chocolate chips with raisins for an oatmeal-raisin cookie instead.

Chocolate Chip Oatmeal Cookies contain all low-FODMAP ingredients, however oat flour and oats can accumulate in GOS. One to two cookies should be fine. If you are gluten sensistive, be sure to buy gluten-free oats, and oat flour. Oats, by nature are already gluten-free, however, they may experience cross-contamination during harvest and processing.
