Who hasn't had a couple of avocados ripening on the counter a little too long? Instead of making guacamole, try making this chocolate avocado mousse. Avocado has the perfect creamy smooth texture base for a vegan mousse, pudding, or even frosting, and so simple to pull together! Once you add the chocolate and maple syrup, it's completely transformed into something that its dairy counterpart requires a lot more effort.
It's also another great way to sneak veggies into family members who may be anti-"green." In fact, a lot of people have a hard time imagining an avocado functioning as a dessert, so if you have this type of picky eater in your household, don’t let them see you make it and don’t mention the main ingredient until you hear that “mmmm, this is good!” You never need to mention it at all, but can feel good about serving everyone healthy fats at dessert time.
This would also make a delicious “frosting” for a vanilla cupcake. Frost at serving time; if you frost ahead of time, the moisture will make the cake soggy. Or, try as a tiramisu filling. Play with it! Just eat it.
