Hash browns are a classic well-loved breakfast side and we made it the main event here in this Cheesy Hash Brown Casserole! Potatoes plus Vegan Cheese Sauce, a few veggies thrown in, all come together in this rich and saucy hot casserole. It's extremely flavorful with cheesy and smoky flavors from the spices. You won't even need that hot sauce you put on the table!
Since we're using my Vegan Cheese Sauce, Nut-Free sauce, it makes this dish relatively light on calories, but rich in flavor! While most hash browns are cooking in a ton of oil or butter, the oil content in this recipe is quite limited. It's a wonderful guilt-free weekend indulgence! The casserole and cheese sauce are suitable for low-FODMAP diets.
Double up the casserole and use a 9" x 12" pan for Easter brunch with guests. They won't even know it's vegan. You can also prepare the entire mix a day early, cover and store it in the fridge, and just throw it in the oven 45 minutes before serving time.
