For the second taco in my series, I went Al Pastor, which in Mexican cooking means pulled pork seasoned with chili peppers and pineapple. Of course, I don't eat pork, so went with the vegan ingredient with the "shredded" meat texture, jackfruit in this Al Pastor Sauce, vegan and GF.
The sauce is made from a few different dried chilies to give it a flavor depth. The seed, annatto (achiote) helps give it body and a slightly nutty undertone, and fresh pineapple and orange juice give it a sweetness to offset the spice. It's a delicious sauce and should be used for more than tacos!
Don't be intimidated by the ingredients. they're easily sourced at your local Mexican market, or online and the sauce is quick to make once you have everything! You won't regret trying it yourself. Best yet, one batch of this gives you easily 3 different taco nights. Freeze the leftover sauce in 1 cup portions to pull out and use again!
